I make my own with a single origin, extra virgin Moroccan olive oil. I grow my own oregano and have steeped both dry and fresh oregano. In my experience, I believe the oil done with fresh oregano seems more potent.(It’s important to make sure the fresh oregano has no water…air dry and then chop it a bit to mascerate it.) Warm the oil and pour over the oregano in a jar as above. I’ve let mine steep as long as a month.
Great side benefit with using dried oregano is that once you strain it, use the solid oregano for cooking! I keep a jar of it in the kitchen!
